From what I understand Moe's will have seating for about 80 people. This includes bar seating. It will also be attached to a master dining room with seating for about 120. Seating for the entire complex should be around 300.
Now, as you stated. How do they handle the influx of customers when it opens? I'm thinking food service will still be cafeteria style (counter). I would imagine Moe's will have a bar. So, does the bar also serve food? Or would you have to go get your food and sit at the bar. With limited seating how to you keep people "moving on" is the real question. If this turns out to be like Finnegan's we might have an issue. IMO Finnegan's has good food but awful service.
