You're close, but what I distinctly remember is the shop being located on the second floor of a restaurant building (memory is a bit hazy about the name) in the year 2001.

Could’ve been upstairs of Mo-Town Cafe? That spot had a music/recording theme. They apparently broadcasted FM radio from the booth upstairs

In the late '90s, City Walk had these recording booths where you could sing to a song and receive a CD or tape of your performance. Does anyone happen to recall the name of that particular shop?

Recording Studios of America was found in almost every theme park in the late 80’s/early 90’s.

I don’t remember it, but it could have been part of Motown Cafe as earlier speculated.
