For some reason my frozen that I got at Uni tonight was more like an Icee than it has been.

Did you get it at the Three Broomsticks, just curious because the only one I got there was so frozen I really didn't enjoy it.

And here is a nice read about what else, butterbeer.

The recipe looks great, can't wait to try it. As far as the "real" recipe used by Universal, of course it can't have dairy because it needs to last a long time without spoiling and possibly being kept at uneven/warm temperatures occasionally. I've read several reviews (including one by the Leaky Cauldron) that stated the foam kept replicating itself in the glass, and might contain yeast. As you drink more and more butterbeer, the foam actually increases in size. Since the base liquid isn't carbonated, people are guessing that the foam contains yeast. Yeast and a lot of different forms of sugar, that's my guess for the real recipe!

You sure the base isn't carbonated? There are quite a lot of bubbles and a fizzy feeling when you drink it.

I got it at the Hog's Head.

I'm almost positive butterbeer is carbonated.

Oh, I guess it is. I thought somebody said it wasn't, but I haven't been to the park yet so I have no idea. I did make this recipe last night. It was good, I mixed some butterscotch sauce into the cream soda first. I might have whipped up the cream too much, because it was too thick and just reminded me of a root beer float. I think the real thing will be much better.

The recipe is a true duplicate of the original butterbeer sold at Hogwarts. I've tried it twice now and I can't tell any difference from the real thing. Thanks for posting
this and figuring out what was actually in it. On a hot summer day like today it really tastes good. I'm still looking for a good recipe for pumpkin juice. There are a lot
of them on the internet but the bottle says it has apricot in it and I haven't found a recipe that has this. I did find a place you can buy it for $10.50 a bottle and another
$11.00 for shipping. Kind of expensive for one bottle of pumpkin juice. Thanks again.

I posted something yesterday but it seems when the old HP part 2 thread got restored all of my posts were deleted again...whatever I won't argue it.

But I made the recipe and I loved it, one thing I did different is I bought heavy whipped cream and them I added vanilla to it and stirred it until it was cremier versus the airiness out of the can.

It definately does get thicker if you put the foam in first and then pour the cream soda on top, like a float, but it tastes better when you layer the foam on top, it stays the whole way down too, which is great!

You guys did it! You guys got attention from Screamscape:

(7/14/10) Want to attempt to make your own version of Butterbeer? Orlando United has posted what they claim is an easy to make home version of Butterbeer. Give it a try and see what you think… they’ve got regular, frozen and even suggestions for an adult beverage version.

I tried two batches today with whipped cream. However added sugar so it was really weird. After 2 I am very butterbeered out. Going to wait till tonight to try it without the sugar. I could not find heavy cream,

I learned a little something to make the cream that remains on top of the cream soda (Not sliping off to the side while you drink).

1. Poar a little of the IBC cream soda in.
2. Add the toping.
3. Poar the rest of the IBC soda and let it carbonate.

There you go. A Butterbeer that can leave you a mustache!

I found that the cream should be whisked by hand for a few minutes, but not completely whipped into thick whipped cream. It should be more frothy/bubbly. You might think it's too thin, but then when you put it on top of the cream soda it's perfectly frothy foam that stays on top. It also taste better this way. I stirred 1-2 tablespoons of butterscotch syrup into the cream soda too, that made it taste great.

The problem doing it this way the foam becomes more like the foam on the top of a soda float instead of the think foam its suppossed to be, but to each their own :)

First of all, you guys did an AMAZING job on this! I tried your recipe, and it is to be commended! In fact, the foam I would argue could not be any more perfect!

I started playing around with the base, because it wasn't exaaaaaactly the way I remembered it. Now, I've only had the frozen version, and from what I hear it tastes kind of different than the regular version. But after tweaking your formula, I'm almost positive I have the frozen version nailed!

Here is the recipe I've been using, I hope you all enjoy it!

FROZEN BUTTERBEER RECIPE

* The Foam * (100 % perfected by Ralph and Brian)
1/3 Cup heavy cream
2 tablespoons sugar
1 tablespoon powdered sugar
1 teaspoon vanilla extract
Whip vigorously until thick consistency is achieved

* The Beer *
Shave 3/4ths of a glass of ice into a mug (use a Margaritaville or blender)
Add IBC Cream Soda until almost to the top
Add 1-and-a-half tablespoons of caramel and stir into the icy beer until dissolved

Pour a generous amount of foam on top of the beer, let rest for 10-20 seconds for the soda to carbonate the foam

For an "adult" version, skip the caramel and instead add one shot of Butterscotch schnapps and one shot of Baileys Caramel!

Great

When I was at walmart shopping for the ingredients I came across Imitation Butter Flavor right next to the Vanilla Extract. I added a couple drops of that to the froth mix and it is perfect! Gives you that hint of Butterscotch that you get at the park! Great recipe! Thanks!!!
