According to attractions magazine café La Bomba is re-opening, featuring a Mexican menu. I have to assume this is to make up for the loss of monsters café, somewhat odd that they did not have this ready to go in time for the busy Christmas season that just passed

Universal has been really slow, during the past year or so, to react to capacity issues. Almost, like they didn't give a damn, since all that stimulus money, Disney missteps, and post covid crowds, brought them
easy attendance.....Now, in 2023, we're back to the real world. Perhaps, Universal will work harder to make the guest experience comparable to what it was before.

They had to move VIP and Private events so they might have targeted holidays 2022 but couldn’t get it open till now. Occom’s razor over “they’re lazy”.

Yeah that's so true. Universal is doing absolutely nothing to vastly expand their resort offerings and thus their capacity right now!

When Epic opens, IOA and USF will become even more busier as people start to center their Orlando visits on Universal, not Disney.

Like @Mad Dog mentioned there hasn't been any significant changes from the ops side at Universal yet to alleviate the long lines at food stands, parking taking forever, etc.

On the plus side, once Minion Cafe opens, it'll basically add up a whole new quick service option. Capacity!!!
