That would be cool to theme it with the new show. If I was a betting woman, I would go with Today Show or one of their animated properties, unfortunately.

GSATS, as mentioned elsewhere, are Potter levels for Fallon. Today Show Cafe will be a hit for the parents who get dragged to Uni.

Was just about to say this. They needed to rip out the air ducts and redo it anyway. The theming isn’t really relevant to me as long as they still have coffee and baked goods.

Well, on the whole, I'd rather have Hello Kitty serve me a croissant, but young people always forget that older demographics exist and must also be catered to OH HOLY CRAP I'M MY DAD NOW

And the only way that this place was probably ever going to get the money for a redo was by adding a bit of synergy and light theming and calling it the Today Show Cafe. The ROI will probably be huge as I imagine a lot more people will stop in here for breakfast now.

A lot of people walked right by the Boulangerie while looking for a place for breakfast bc it wasn't clear by the name what it was. Today Show Cafe is pretty clear.

I don't expect them to change the recipes or food selection for what will be a breakfast/snack quick service. So yes the theme doesn't really matter and yet Universal will make it work.
