I have to ask, are we judging 'fine dining' by the price or the quality? Having 'middle price' restaurants that serve food as good as those charging more is not a bad thing as far as I am concerned. In fact, in the long run it will only make Universal look better.
Edit: After some more thought, here are some other reasons why Universal should currently strive for quality food and dining experiences at a 'middle price' point. When you think about it, most Disney guests stay on site so they have easy access to DS and not a whole heck of a lot outside of the resort. By that rationale, DS is destined to do pretty well. Universal still does not have a majority of its population staying on site so they have to be more careful with their food offerings. People wanting a $50 steak can just as easily get it down the road from Universal and since they are most likely staying off site, they probably will. Until the balance shifts at Universal, they should stick with the plan they seem to be implementing.
One further thought, Universal has a larger locals base than WDW. Quality 'middle price' point meals are a better way to keep the locals coming back for more as opposed to just driving to Sand Lake/Dr. Phillips after their time in the parks.
